Mornings around my house are crazy. I’m not sure why, since I only have one child who isn’t even in school yet; however, somehow, between my husband and 2-year-old, they keep my coffee cold and toes on fire.
So, come weekend time, and especially holidays, I try to slow down life a little and make a good breakfast or brunch at least once. With Christmas right around the corner I am planning on taking full advantage of extra helping hands and a non-working husband by making brunch.
When I think about brunch, I usually think about pancakes and waffles and granola and omelettes; but this year I don’t want to make the norm. I want to make the complete opposite of normal. In fact, I want to make something that has nothing to do with holiday food at all.
Wait… No cinnamon? No maple syrup? No coffee cake? No PUMPKIN SPICE?
No, friends, none of that. And here’s why…
Come Christmas time, we’ve already gone through Pumpkin overload, better known as October, we’ve given thanks and stuffed our bellies with holiday goodness all though November, and now, it’s Peppermint and Eggnog and Turkey all over again. One meal needs to be different.
So I decided, why not make Breakfast Tostadas? Breakfast tostadas are the complete opposite of holiday food.
Besides, Mexican food is amazing, all day, every day and any time of the year.
But these aren’t just any tostadas; these tostadas are special. See, here’s the thing, the tortillas are awesome. The most authentic tasting store-bought tortillas I’ve ever tried, TortillaLand makes all their flour tortillas with just 5 ingredients (Wheat flour, Water, Canola Oil, Salt, Sugar) and no preservatives.
But, I’m getting ahead of myself. I found these awesome tortillas while doing my weekly Costco run with Octavian. My primary areas of focus whenever I shop at Costco are usually the Organic section, rotisserie chickens, samples, diapers and toys. I rarely walk through the refrigerated aisles, and when I do, it’s just to reach a sample. On this trip, however, I was lucky and needed something from the refrigerated section right next door to these tortillas. The ‘Organic’ and ‘just 5 simple ingredients’ written on the packaging jumped out at me.
“Could this be true?”, I thought. So, I picked up a pack.
You guys, it’s true.
Into the cart (with the 5 billion other things) they went.
That same day, almost as soon as I got home, I had to try one and see how they worked. I pulled out my skillet, heated it up, and plopped on an uncooked tortilla. Less than a minute later it started to puff up and was ready to eat. So easy, but how did they taste?
Amazing and fresh with the texture of real just-made tortillas.
So I gave one to my husband. He’s a pretty honest critic. And he loved them, too. I knew these were the new favorites and would become a regular addition to our Costco purchases. They also stay fresh in the refrigerator for a couple months, which is perfect just in case you live far from Costco and want to stock up. Anyway, back to brunch… I started thinking about all the other things I could make with these tortillas and suddenly, it dawned on me, fry them!
I’m not usually a big fan of fried foods, but i’ll make an exception for fried tortillas. And holiday tostadas? Well, let’s just say there’s no stopping me.
As I don’t usually eat fried food, I was a wee bit nervous to fry tortillas (I really had no idea what I was doing), but these were so easy to make! They turned out light and crunchy and the perfect base for any tostada.

Prep Time: 10 minutes / Cook Time: 30 minutes (approximately) / Total Time: 40 minutes
Servings: 8-10 Tostadas
1 Tbsp olive oil (or oil of choice)
1 yellow onion, chopped
3 bell peppers (I used each of red, orange and yellow), chopped
8 slices of bacon (grease reserved)
5 cloves garlic, minced
1/2 milk of choice (unsweetened)
salt and pepper
1 can black beans, drained and rinsed
8-10 TortillaLand flour tortillas
oil for frying (corn oil, sunflower seed oil, or safflower oil are recommended, but I used canola oil because that’s what I had on hand)
Green onion, chopped
Avocado, pitted and sliced
Sour cream, hot sauce, salsa
- In a large skillet over medium-high heat, add approximately one tablespoon oil and heat until translucent and shimmering. Add the chopped onion and stir. Cook for 2-3 minutes and then add the chopped bell peppers to the onions. Sprinkle with a little salt and pepper and mix together. Stirring every 30 seconds to one minute, continue to cook over medium heat until onions and peppers are soft (not mushy), approximately 7-10 minutes. Remove from heat and transfer to a separate bowl. Set aside.
- In a new large skillet prepare your bacon over medium heat according to package instructions. Transfer cooked bacon pieces to a plate lined with paper towels and set aside. Once cooled chop into small, bite sized pieces. Drain bacon fat into a separate bowl or cup, but leave enough in your skillet to grease the pan for the eggs.
- In a medium bowl, whisk together the eggs, garlic and milk until fully combined. Add a pinch of salt and pepper and give them a final whisk. Heat your pre-greased skillet over medium high heat and pour in the egg mixture. Turn heat down to medium and allow the eggs to cook for 1-2 minutes before scraping the sides and bottom of the skillet with a spatula. Continue to cook the eggs until fully cooked, scraping the sides and bottom of your skillet often to prevent burning (in other words, you’re making scrambled eggs). Turn off heat and transfer cooked eggs to a separate bowl.
- To make the ‘toasted’ tortillas or tostadas- Preheat oil in a skillet large enough to fit your TortillaLand flour tortillas until it reaches 360 degrees F. I can’t tell you exactly how much oil to add, however, I added approximately 1/2-inch and it worked great. Since you will be frying one tortilla at a time, you don’t need much, but you will need to add more oil to your skillet after you’ve done a few. Once heated, gently poke a couple holes into your tortilla with a fork and place the tortilla directly into the skillet. Fry the tortilla for approximately 2 minutes, flipping once half-way through. Carefully remove from the oil and then drain on a tortilla. Repeat this process for all remaining tortillas**
- Build your tostada: onion mixture, black beans, eggs, bacon, tomato, cilantro and green onion, and avocado. Of course, feel free to add or subtract any ingredients based on personal preference.
*I have not tried frying any other brand or type of tortilla other than the flour tortillas by TortillaLand. I can only speak for the success with this product.
**To add some flavor to your ‘toasted tortilla’, add some of the reserved bacon grease to your frying oil of choice.
