Some days are so draining- emotionally, mentally, physically- that by the time dinner time rolls around I think I might die. Ok, that might be a slight, very small, teeny tiny exaggeration, but you catch my drift. Some days simply knock the life out of me.
Today was one of those days. Actually, many days have felt that way lately (apologies if I start to sound like a broken record, but only real life here).
Although my child gifted me with sleeping in until 7:15am, it was the least he could do after a night of head-butting me off my pillow. I mean, what is it with kids? We’re sleep in a full sized bed, yet somehow, my body ends up with a sliver of mattress to sleep on and without any pillow at all. All the co-sleepers out there, you know what I’m talking about.
Despite the lazy start, I hoped to go to the gym, but a certain very opinionated little boy refused to change out of his footed fleece jammies. You guys, I’ll go to the market or run other errands with him in his pjs, but the gym? no. Oh, I would do it, but his shoes don’t fit over the jammies and I’m pretty sure shoes are required. (are they?)
So, a run to Home Depot (where I was whacked in the forehead with a ruler), lunch, laundry, two recipes cooked and photographed and a short nap later (for the kid, not me), I wrangled the kids together with the brilliant idea to run to our friends house, rather than drive. Juniper would get some much-needed exercise, I would get some not-so-needed exercise and Octavian would, well, (fingers crossed) keep quiet. Despite the flat tires on my stroller (note to self: check before leaving the house next time) and wind, it was good. Two hours outdoors later, I probably said “NO!” or “COME HERE” at least 100 times and can count on two hands how many times I was actually listened to (most of which were by the dog). A run home, dinner, shower, books and bedtime later (again more than an hour to get him to sleep, sorry husband!), I’m done.
And now the husband is sick. Which is as bad of news as when the doctor told me Octavian had Herpangina (Hand, Foot Mouth).
Parents of multiples, how do you do it?
Am I complaining. No. These are the best years ever. I will miss the crazy when it’s gone, but oh man is it exhausting!
So anyway, enough about exhausting. That’s boring.
Plus, if i’m being honest, I am so tired that if I don’t start to wrap things up here pretty soon this post will be saved for tomorrow and the past hour of writing would have been for nothing (yes, I am a very very slow writer).
So on to food. Food always makes me feel good.
Today I have this delicious Blood Orange Couscous with Almonds, Raisins and Dates. That’s right, move aside boring old plain rice and couscous, this is so much better and takes only 5 minutes longer to prepare. My favorite part about this side dish is it’s great with just about everything- fish, chicken, stew. You could even toss some leftover rotisserie chicken in there and call it a meal. However, if you’re in need of some dinner inspiration, I recommend making it with this Moroccan Beef Tajine with Eggplant and Dried Fruit or this Easy Moroccan Chicken Stew.

Blood Orange Couscous with Almonds, Raisins + Dates
Prep Time: 10 minutes / Cook Time: 5 minutes / Total Time: 15 minutes
Yield: 4-6 servings
1 cup fresh orange juice
1 tablespoon orange zest
1/3 cup pitted dates, chopped
1/3 cup raisins
1 tablespoon butter
1.5 teaspoons cinnamon
1 teaspoon salt
1 cup couscous
1/2 cup slivered almonds
- Over medium heat, bring orange juice to a low boil in a medium saucepan. Stir in orange zest dates, raisins, butter, cinnamon and salt. Still boiling stir in couscous, cover with a fitted lid and turn off heat. Allow couscous to stand, undisturbed, for 5 minutes. Fluff with a fork and top with slivered almonds before serving.
