This week called for doughnuts (and wine. and then more wine).
Remember in the last post how I mentioned that Octavian had croup? Well, back to the doctor we went two days later when his symptoms started to worsen again.
Ear infection in both ears.
You guuuuys, my poor boy has never been so sick and sad and miserable in his entire 2 years and 3 months of life. I feel awful and completely helpless. Aside from cuddles (when he’ll let me) and ibuprofen, there is little I can do to help make him feel better.
That said, he has also never been a bigger pain in my ass. Like, for real.
Driving home in the car the other afternoon, his shoe comes off and his world falls apart. So, he throws his water bottle out of reach, along with his mini play phone. The wailing begins. Normally I can distract him with a song or just call out gardener! and he will calm down, this time, it was like fuel to his fire. I pulled over, gave him his water and his toy and tried to put his shoe on. NOOOOOO! NO! NOOOOO! To shoe or not to shoe? This continues when we get home… for 30 minutes.
I usually take a long shower with him before bedtime whenever he gets a bad cough. Tonight, like every other night, I put him in the shower and he went NUTS trying to escape. Daddy opens the door to the shower to let him. The hysterics amplify. Wait, seriously?
His cheese broke and I couldn’t put it back together.
He wants to eat standing in his tower, I try to enforce his highchair. I give-in (after all, he is sick) and let him eat in his tower; but NOOOOO, now he wants to eat on the couch while watching videos of lawnmowers.
He wanted homemade waffles (his fav) and didn’t eat a single bite.
He wants to sleep on “mommy pillow” every single night (translation: sleep next to me on the floor). He sleeps for an hour and is then wide awake running circles around me while I try to convince him to sleep. You guys, I don’t know how to handle toddler sleep troubles.
TV- all.the.time. And rather than watch Nemo or Elmo or some other cartoon, he now demands YouTube videos of lawnmowers, weedeaters, and blowers. It is OUT OF CONTROL.
Since we’re on the subject of gardening equipment, Octavian thinks anyone driving a pickup truck is a landscaper. He also gets very upset when I don’t follow landscaping trucks to their destinations so that he can watch them (no, I have not, and will not ever do this). You can imagine how painful it can be getting from place to place when he is in one of his “moods” or not feeling well with the many pickup trucks (and therefore landscapers) out there.
Lucky for Octavian, I have more patience than I ever realized, otherwise things would be looking a lot uglier around here. This week may have made up my mind on whether or not I will ever have another child (sadly, I am semi-serious), but thankfully I haven’t lost my cool…yet.
Actually, that’s not entirely true- when it’s 2am and my 2 year old is bouncing off the walls (aka me), I am not always at my best.
Anywayyyyyyyy, enough about THAT.
Let’s talk a little about doughnuts. Doughnuts make me HAPPY. Especially when they are covered in bright pink and red sprinkles and take less than 30 minutes to whip together and bake up.
And baked doughnuts? the BEST! They taste just as good as the fried ones and I can eat 2 or 3 with a little less guilt 🙂
While these baked doughnuts are covered in pink sprinkles for Valentine’s Day which is right around the corner, they are the perfect template for your own doughnut masterpiece.
Mix in food coloring for colored frosting, change up the sprinkle color to match the current holiday, or skip the frosting all together and smear with peanut butter and jelly (why not?).
Plus, what kiddo doesn’t love doughnuts?!
I mean, my kid goes crazy for them (in a good way). So he’ll be getting one tomorrow morning.
Now, fingers crossed he doesn’t cry over a fallen sprinkle.
Baked Vanilla Doughnuts
Prep Time: 15 minutes / Cook Time: 6-8 minutes / Total Time: 21-23 minutes
Yield: approximately 10 doughnuts

For the Doughnuts:
2 cups all-purpose flour
3/4 cup granulated sugar
2 teaspoons baking powder
1/2 teaspoon salt
3/4 cup buttermilk
2 eggs, lightly beaten
2 teaspoons vanilla extract
3 tablespoons butter, melted
For the Glaze:
1 cup confectioners sugar
1-2 Tablespoons milk
1 1/2 teaspoon vanilla extract
Food coloring and sprinkles (optional)
Preheat oven to 425 degrees F. Spray your doughnut pan(2) with nonstick cooking spray. Set aside.
In a large bowl, sift together the flour, sugar, baking powder and salt. In a separate bowl, gently whisk together the buttermilk, eggs, vanilla and butter. Pour the wet ingredients into the dry ingredients and gently mix until just combined (no need to go crazy with the whisking at this point).
Slowly spoon batter into the prepared doughnut pan, filling each cup approximately half way full. If you find this too messy (the batter can be quite sticky), transfer the batter to a large ziplock bag and cut off one corner. Carefully pipe batter into the prepared doughnut pan.
Bake in the preheated oven for 6-8 minutes, or until tops are golden and spring back when touched. Cook doughnuts in the pan for a few minutes before transferring them to a wire rack to cool completely. I strongly recommend waiting until doughnuts are at room temperature before applying the glaze (or, if you can’t wait, you can just dunk them in, too 🙂
To make the glaze, whisk together the sugar, vanilla, and 1 tablespoon of milk until completely combined. If glaze is too thick, slowly add additional milk, 1 teaspoon at a time, until desired consistency is reached.
It is easiest to dunk the entire face of the doughnut into the glaze and gently flip back over rather than apply the glaze with a spoon, but play around and find out what method works best for you.
