Hip Hip Hooray! My child is no longer puking his guts out!
It was ROUGH over here for a while. Especially after I caught whatever nasty little bug he was fighting. When I woke up yesterday and told my husband I was sick his response, since I wasn’t actually throwing up, was “you haven’t had your coffee yet…come and have your coffee and you’ll be fine”.
Right, because coffee is exactly what I want when I feel like I am going to vomit…sweetheart.
Thankfully, my body is awesome and fought those bugs off in 24 hours and I feel good as new today. But, can you guess who is “so sick” now?
That’s right- my husband.
Is he vomiting? No.
When he finally got himself out of bed this morning all I could say was, “you haven’t had your coffee yet. I’ll make you some coffee, you’ll feel so much better”.
Yes, I am that wife. No, I don’t feel bad at all.
Ok, guys, I promise that was the last I will talk about sickness until the next sickness.
POPSICLES! We have POPSICLES!!
The most beautiful, fruity, summery popsicles you will EVER make!
There isn’t much to them- homemade lemonade, oven roasted strawberries (optional), and fresh fruit. Totally easy, but oh so FUN!
Your kids will love them, guests will love them and YOU will love them when the next weeks temperatures are predicted to be in the 100’s.
I know, whoa. Take me to the ocean. Oh wait! I am going to the ocean…on Sunday! What are your plans for the weekend? Popsicles perhaps?
Lemonade and Fruit Popsicles
Prep Time: 20 minutes | Cook Time: 35 minutes | Freeze Time: 4+ hours

FOR THE LEMONADE
3/4 cup granulated sugar
1 cup water
1 cup fresh squeezed lemon juice
4-6 cup cold water (to dilute)
FOR THE ROASTED STRAWBERRIES
1 pound fresh strawberries, stems removed and halved
2 tablespoons granulated sugar
Fresh fruit- kiwi, blueberries, etc.
FOR THE LEMONADE: in a small saucepan bring the sugar and 1 cup of water to a low boil. Reduce to a simmer and cook, stirring constantly, until sugar dissolves completely. Remove from heat. Carefully transfer the prepared simple syrup and fresh squeeze lemon juice to a large pitcher. Dilute with water until desired sweetness is reached (I prefer my lemonade less sweet, so I added extra water). Start with 4 cups and move up from there.
FOR THE ROASTED STRAWBERRIES: Preheat oven to 350 degrees F. Line a large baking sheet with parchment paper. Transfer sliced strawberries to lined baking sheet and toss with sugar. Roast for 25-30 minutes.
While the strawberries are roasting prepare additional fresh fruits to go in your popsicles. In these pops I put in blueberries and kiwi, but feel free to use your fav. Make it super fun for the kiddos by cutting out star or flower shapes.
With strawberries roasted, fruit prepared and lemonade ready, make your pops!
PREPARE THE POPSICLES: I build my popsicles in layers. Fill each popsicle mild 1/3 way with lemonade and drop in a few fruit pieces. Continue by filling each popsicle mold 1/3 way more and add more fruit. Finally, finish by filling each mold with lemonade. Freeze for at least 4-8 hours (I waited until the next day).
For easy removal, run the popsicle mold under warm water for approximately 10 seconds. The popsicles should slide right out!
