Tacos are a California summer staple and one of my favorite foods. Today I’m celebrating delicious tacos, sweet summer and 100 years of the makers of LA VICTORIA® Brand with these amazing Summer Tacos with Orange Cherry Salsa.
Like most kids, I grew up eating tacos and quesadillas. They were a staple of my diet then, and, in many ways, remain a staple of my diet now. My taco creations may be a little more sophisticated these days, but as a kid they were all about two things-
The cheese and THE SAUCE.
I remember it clearly… I would cook my quesadilla (with too much cheese, obviously) in our toaster oven, cut it into triangles, dump a huge spoonful of sour cream in the middle and pour LA VICTORIA® Brand Taco Sauce over the top. Always too much sour cream and taco sauce, but I made sure to scoop up every last bit.
My mom, sister and brother all ate their tacos and quesadillas the same way. And my mom, bless her heart, always made sure to keep our pantry stocked with extra bottles of LA VICTORIA® Brand taco sauce because that was the only one we would eat.
I realize now two things-
ONE: This was the beginning of my love for all Mexican-inspired food and flavors. After all, I was born and raised in California; it had to happen somewhere and, TWO: my mom is totally to blame for my grocery hoarding tendencies. OK, maybe not completely, but perhaps a little.
Curious about my husbands introduction to Mexican-inspired flavors, I asked what he ate growing up.
You guys, he ate THE SAME THING!

Made with LA VICTORIA® Brand Cilantro Salsa Mild and LA VICTORIA® Brand Fire Roasted Chiles, these tacos were a HUGE hit. Bursting with unique Mexican inspired flavors, sweet summer fruit and creamy avocado, these tacos are GOOD. And the marinade is legit, you guys. If nothing else, make the marinade 🙂
