Heat a large skillet over medium heat, cook bacon until crispy, and set aside; strain the bacon fat. In the skillet, combine reserved bacon fat, butter, onions, and salt, sautéing until softened.
Stir in black pepper, brown sugar, and sherry vinegar, cooking for 10 minutes. Add chopped bacon, water, and fresh cranberries, cover, and simmer for 20-30 minutes until cranberries burst and the mixture thickens.
Remove from heat, stir in balsamic vinaigrette and fresh thyme if desired. Enjoy!
