In a large bowl, combine the pork, garlic, Chinese cooking wine, soy sauce, mirin, vegetable oil, ginger, and Chinese five spice. Mix well, then set aside to marinate.
Toast Sichuan peppercorns until fragrant, then grind them finely and place in a bowl. Add chili oil, sesame paste, soy sauce, garlic, sugar, and sesame oil to the bowl, whisking to create a paste for the sauce. Set it aside.
Cook spaghetti according to package instructions or fresh noodles for 2 minutes. Blanch bok choy in pasta water for 1 minute, then cool in an ice bath. Drain noodles. In a skillet, heat oil, add and brown meat, breaking it up. Stir in mustard greens and cook for 5 mins.
To serve, divide the dish into two servings. In a bowl, combine half of the spicy sauce, cooked noodles, cooked pork, 1-2 bok choy, and 2-3 tablespoons of chicken broth for each serving. Optionally, garnish with chopped green onions and crushed peanuts.
