Preheat oven to 375°F, scrub potatoes under cold running water and dry them, then transfer them to baking sheet. Coat them with olive oil and sprinkle salt and pepper, then bake them for 25-30 minutes or until fork tender. Remove potatoes from oven and allow them to cool until safely handled.
Cut each potato in half lengthwise, scoop out flesh, transfer to baking sheet, brush with melted butter, bake for 10 minutes, flip over, and bake face-up for an additional 10 minutes.
