Boil salted water, cook pasta until al dente, reserving 1 ½-2 cups pasta water, and set aside. In a skillet, cook pancetta or bacon until crispy; whisk egg yolks, cheese, and pepper, then stir in ½ cup pasta water and cooked bacon.
Heat the skillet, add cooked spaghetti and 1 cup pasta water, tossing until water emulsifies. Turn off heat, pour in the egg mixture, toss until the sauce thickens, and serve with black pepper and shredded Parmesan if desired.
