Cook sweet potato in salted water for 10-15 minutes until tender and soft, chopping into chunks. Meanwhile, chop the remaining sweet potatoes and butternut squash into small cubes. Set aside.

How to Make Sweet Potato Hash

Heat oil in a skillet or Dutch oven. Add diced shallots, minced garlic, and cubed butternut squash. Sauté for 4-5 minutes, stirring constantly. Add sweet potato and sauté until tender, about 12-15 minutes.

Combine chopped kale, boiled potato, butternut squash, and mashed potatoes in a skillet. Season with salt and pepper. Bring water to a boil, add vinegar, and gently crack eggs into the pan. Poach for 3-4 minutes until set but still runny. Place eggs on potato hash.

Sprinkle with crumbled feta, chopped Italian parsley and red chili flakes (if desired). Best served immediately.
