Traditional Ukrainian Borscht Soup is an iconic red beet soup made with hearty stew beef, cabbage, potatoes, carrots, garlic, and fresh dill and served with a dollop of sour cream and rye bread.

Heat oil in a large soup pot, add and brown beef. Add celery, carrot, onion, garlic, bay leaves, coriander powder, salt, and pepper. Cover with water, bring to a boil, then simmer for 1½-2 hours.
Skim off scum for the first 15-20 minutes. In a separate skillet, melt butter, cook onion, add beets, carrots, tomato sauce, tomato paste, vinegar, salt, and pepper, then set aside.
Once beef is tender, remove vegetables and bay leaves, add potatoes, and simmer for 15 minutes. Stir in beet mixture and cabbage, cook for 2-3 minutes, then add dill. Serve with sour cream and fresh bread.
