- Dried White Beans - Thick Cut Bacon - Onion - Carrots - Celery - Garlic - Fresh Thyme - Rosemary - Black Pepper

Soak your beans first.  Soak your beans overnight. Transfer the dried beans to a large bowl and add enough water so that they are covered by approximately 3 inches. Allow the beans to soak overnight or up to 24 hours.

Cook the bacon. After the bacon is done remove and drain. Add the onion, carrots, and celery and cook, stirring occasionally until softened.

Add beans. Add the beans and 10 cups of water. Bring to a boil, then let simmer for 1-2 hours.

Pour into a bowl, add crumbled bacon to the top and enjoy!
