Homemade Fruit Popsicles

These Fruit Popsicles are fun, flavorful, and so easy to make! Made with your favorite homemade or store-bought lemonade and fresh fruit, these kid-approved popsicles are the perfect healthy treat for a hot summer day!

Ingredients

FOR THE LEMONADE

  • ¾ cup granulated sugar
  • 1 cup water
  • 1 cup fresh lemon juice
  • 4-6 cup cold water - to dilute

FOR THE ROASTED STRAWBERRIES

  • 1 pound fresh strawberries - stems removed and halved
  • 2 tablespoon granulated sugar

OTHER - Fresh Fruit

  • kiwi - peeled and sliced
  • blueberries
  • peaches - thinly sliced
  • nectarines - thinly sliced

Instructions

FOR THE LEMONADE

  • in a small saucepan bring the sugar and 1 cup of water to a low boil. Reduce to a simmer and cook, stirring constantly, until the sugar dissolves completely. Remove from heat. Carefully transfer the prepared simple syrup and freshly squeezed lemon juice to a large pitcher. Dilute with water until the desired sweetness is reached (I prefer my lemonade less sweet, so I added extra water). Start with 4 cups and move up from there.

FOR THE ROASTED STRAWBERRIES

  • Preheat the oven to 350 degrees F. Line a large baking sheet with parchment paper. Transfer the sliced strawberries to a lined baking sheet and toss with sugar. Roast for 25-30 minutes.
  • While the strawberries are roasting prepare additional fresh fruits to go in your popsicles. In these popsicles, I put in blueberries and kiwi, but feel free to include your favorites. Make it super fun for the kiddos by cutting out star or flower shapes.

PREPARE THE POPSICLES

  • I build my popsicles in layers. Fill each popsicle mold 1/3 way with lemonade and drop in a few fruit pieces. Continue by filling each popsicle mold 1/3 way more and add more fruit. Finally, finish by filling each mold with lemonade. Freeze for at least 4-8 hours (I waited until the next day).
  • For easy removal, run the popsicle mold under warm water for approximately 10 seconds. The popsicles should slide right out!

Notes

  • I used this Popsicle Mold.
  • Roasting the strawberries is optional, but recommended if you have the time.
