Preheat your oven and melt the butter.  Spray a 24-cup mini muffin pan and a large sheet of parchment paper with non-stick cooking spray. 

Setup

Transfer one sheet of phyllo dough to the parchment paper and gently brush the surface with butter. Repeat with 4-5 more sheets of phyllo dough.

Cut the dough into 12 equally-sized squares. From each, trim away approximately one centimeter of dough (to make them into smaller squares).

Transfer each square to the prepared muffin tin and gently press it into the bottom. Fill each cup with beans or pie weights.

Bake

Bake for 8-12 minutes, or until golden.

Remove and allow them to cool before carefully removing each phyllo cup from the muffin tin and discarding the beans. Set aside until ready to fill.
