To prepare the soup, start by softening the vegetables in 2 tablespoons of olive oil over medium heat in a large stockpot; cook onions until translucent, then add carrots, celery, and minced garlic, stirring frequently for a total of 10-15 minutes.
Sprinkle with poultry seasoning, add canned tomatoes and 3 quarts of stock, bringing it to a boil and simmering for 10 minutes.
Introduce shredded leftover turkey and 1 cup of uncooked pearled barley, cooking until the barley is tender and vegetables are soft, approximately 15 minutes. Season to taste, and garnish with fresh herbs and Parmesan cheese if desired before serving.
