Garlic Butter Steak Bites

These Garlic Butter Steak Bites are made with tender sirloin steak, seared in a hot skillet, and finished in a rich garlic butter sauce. Ready in less than 15 minutes, this easy steak bites recipe is perfect for busy weeknights, quick dinners, or a simple appetizer.

Ingredients

  • pounds top sirloin steak - cut into 1-inch pieces
  • 1 tablespoon olive oil
  • salt and black pepper - to season
  • 4 tablespoons salted butter
  • 5 cloves garlic - minced
  • 2 tablespoons fresh parsley - finely chopped, to garnish

Instructions

  • Pat the steak dry with paper towels, then cut it into bite-size pieces. Season generously with salt and black pepper.
  • Heat the olive oil in a large cast-iron or stainless steel skillet over high heat. Once hot, add the steak in a single layer, working in batches if needed.
  • Sear the steak for about 2 minutes without moving it, then stir and cook for 1 to 2 minutes more, until browned on all sides and cooked to your liking. Transfer to a plate.
  • Reduce the heat to medium-low. Add the butter and minced garlic to the skillet and cook for about 1 minute, stirring often, until fragrant.
  • Return the steak bites to the pan and toss well to coat in the garlic butter sauce.
  • Remove from heat, sprinkle with fresh parsley, and serve immediately.

Notes

  • Top sirloin is my favorite cut for steak bites because it is flavorful, tender, and more affordable than cuts like ribeye or tenderloin. Ribeye, tenderloin, and New York strip also work well.
  • For the best sear, use a large cast-iron skillet or heavy stainless steel skillet and make sure the pan is very hot before adding the steak. Avoid overcrowding the pan or the steak will steam instead of brown.
  • Patting the steak dry before cooking helps it sear better. Because steak bites cook quickly, keep a close eye on them and use a digital meat thermometer if needed. For medium steak, look for an internal temperature of about 140 to 145°F.
  • If you want to add vegetables like sliced onions, mushrooms, or bell peppers, cook them first and set them aside before cooking the steak.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat quickly in a hot skillet just until warmed through.
