BBQ Chicken Quinoa Casserole

Preheat oven to 375 degrees F.
In a large bowl mix together 3 cups cooked quinoa, shredded cooked chicken, cheese, black beans, corn, chopped tomatoes, cauliflower rice, bbq sauce and chopped green onions. Stir until combined and add additional bbq sauce if necessary.
Transfer the quinoa mixture to a large baking dish and smooth the top with a large spatula. Bake at 375 degrees F for approximately 20-25 minutes, or until warmed through. Remove from oven and drizzle with additional bbq sauce, sour cream and sprinkle with fresh chopped red onion, green onion and cilantro.
