This creamy White Chicken Chili Recipe is packed with tender shredded chicken, cannellini beans, sweet corn, green chiles, and cream cheese. Pureed white beans naturally thicken the broth, while fresh lime juice balances the rich, creamy finish.

Ingredients

  • 1 tablespoon olive oil
  • 2 medium yellow onions - diced
  • 2 jalapeños - seeded and diced
  • 5 cloves garlic - minced
  • 1 (4 ounce) can diced green chilies
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon dried oregano
  • 1 teaspoon salt - plus more to taste
  • ½ teaspoon black pepper
  • 4 cups low-sodium chicken broth - plus more as needed
  • 2 pounds boneless skinless chicken breasts
  • 2 (15 ounce) cans cannellini beans - divided
  • 1½ cups frozen sweet corn
  • 8 ounce full-fat cream cheese - brought to room temperature and cut into cubes
  • 1 lime - juiced
  • For serving - chopped cilantro, sour cream, shredded cheese, avocado, fresh lime juice, hot sauce, crushed tortilla chips

Instructions

  • Heat the olive oil in a large Dutch oven over medium heat. Add the onions and jalapeños and cook for about 5 minutes, or until softened. Add the garlic and cook for 30-60 seconds, until fragrant.

  • Stir in the diced green chiles, cumin, chili powder, oregano, salt, and black pepper. Cook for about 30 seconds, stirring constantly.

  • Pour in the chicken broth and add the chicken breasts. Increase the heat and bring to a gentle boil, then immediately reduce to a simmer and cover. Cook until the chicken reaches an internal temperature of 165°F, about 15-20 minutes depending on thickness.

  • Meanwhile, drain one can of cannellini beans without rinsing and transfer the beans to a small food processor. Process until smooth. Drain and rinse the second can of beans and set aside.

  • Transfer the cooked chicken to a clean plate or cutting board. Let it rest for a few minutes, then shred it using two forks.
  • Add the pureed beans, whole cannellini beans, and corn to the pot. Return to a gentle simmer, then add the room-temperature cream cheese. Cook over low to medium-low heat, stirring frequently, until the cream cheese has completely melted and the broth is smooth and creamy.

  • Return the shredded chicken to the pot and cook just until heated through. Stir in the fresh lime juice. Taste and season with additional salt and black pepper as needed.

Notes

  • Jalapenos: Jalapenos can vary considerably in heat. If you're sensitive to spicy foods, use half to one jalapeno or omit them altogether.
  • Rotisserie chicken shortcut: Substitute 3-4 cups of cooked shredded or rotisserie chicken. Add it during the final 5 minutes of cooking, just long enough to heat through.
  • No food processor? Mash the drained beans thoroughly with a potato masher or fork. The texture won't be quite as smooth, but they will still help thicken the broth.
  • Cream cheese: For the smoothest broth, bring the cream cheese to room temperature and cut it into cubes before adding. Keep the chili at a gentle simmer rather than a vigorous boil after adding it.
  • Consistency: The chili thickens as it sits. If it becomes too thick, stir in additional chicken broth a little at a time.
  • Storage: Refrigerate leftovers in an airtight container for up to 4 days. Reheat gently, adding a splash of broth if necessary. Freezing is not recommended.
