CUT THE SQUASH IN HALF AND SCOOP OUT THE SEEDS
COVER WITH OLIVE OIL AND SEASON WITH SALT AND PEPPER.

Prep the Squash

Preheat oven to 375 degrees F. Rinse and dry your squash. Slice off the stem and bottom ends of the squash, so that both ends are flat. Using a large sturdy knife, cut your butternut squash in half lengthwise.

Scoop out the seeds and stringy bits with a spoon. Transfer, cut-side-up into a baking dish and brush with olive oil or melted butter, coating the entire surface of the squash.

Season with salt and pepper and brown sugar (if desired).
Bake and Serve

Transfer to the oven and roast until soft, and fork-tender. Remove from oven and allow to cool before scooping the flesh from the skin or using in your favorite recipes.
