Limoncello Gin Cocktail Recipe – Refreshing and delicious, this easy four-ingredient cocktail is made with sweet Limoncello, gin, lime juice, and fresh thyme. Easy enough to serve individually or prepared into a large batch.

Limoncello Gin Cocktail Recipe with Fresh Thyme

I originally made this cocktail two summers ago. I loved it so much that I decided to photograph it and share it with you guys, but life got busy (as life does), I became distracted (as often happens) and that last part never happened. Fortunately, I found the images the other afternoon while digging through old folders and decided that this would be the perfect cocktail for this stuck-at-home, who knows what day it is, Friday.

Super simple to make, I do recommend that you use a cocktail shaker or mix everything together really well with a spoon and strain it through a mesh strainer– while I love the flavor of thyme, I don’t really enjoy drinking the little leaves.

What is Limoncello?

Limoncello is a classic Italian liqueur made from sugar, water, alcohol (typically grappa or vodka) and the zest of particularly flavorful lemons that grow in the regions of Sorrento, Capri, and the Amalfi Coast in Italy. Harvested by hand between the months of February through October, the lemons used to make limoncello have a more intense flavor and slight sweetness when compared to regular lemons.

Limoncello Gin Cocktail Ingredients

  • Gin
  • Limoncello
  • Fresh lime juice
  • Fresh thyme – dried thyme is not recommended
  • Lemon peels, to garnish

If you find that this cocktail is too strong or too sweet (or you simply drink delicious cocktails too fast) feel free to top off your cocktail with a little bubbly water. Wait to do this, however, until just before serving. There’s nothing worse than a cocktail filled with flat bubble water.

How to Make This Limoncello Cocktail

Add some thyme to a cocktail shaker and muddle gently. Add the gin, limoncello, and fresh lime juice. Fill with ice and stir thoroughly until cold. Strain through a mesh strainer into a glass filled with ice. Top with bubble water, if desired. Garnish with fresh thyme and lime or lemon wheels or wedges.

Ingredients 

  • 2 sprigs fresh thyme, plus more to garnish
  • 2 fluid ounce gin
  • 1 fluid ounce limoncello
  • .5 fluid ounce fresh lime juice
  • Splash of bubble water, (optional)

Instructions 

  • Add the fresh thyme to a cocktail shaker and muddle gently. Add the gin, limoncello, and fresh lime juice. Fill with ice and stir thoroughly until cold. Strain into a glass filled with ice and top with bubble water, if desired. Garnish with fresh thyme and lime or lemon wheels or wedges.
