I was SO CLOSE to getting this amazing and easy vanilla overnight oat posted for you guys last night. The photos were edited, recipe written out and blog writing part started.
One may even say I was right on schedule for the day.
Then toddler bedtime routine happened.
A couple months ago Octavian decided only Mommy can put him to sleep, so now, while the husband gets to relax I embark on the great unknown, also known as bedtime with a toddler.
Sometimes it takes 15 minutes. Sometimes it takes 45 minutes. Sometimes it takes… an hour and a half.
Long story short, Octavian woke up when I transferred him to his crib (because yessss, we have regressed to rocking and reading to sleep). With my own nest ready and waiting for me on the floor next to his crib, I made myself comfortable knowing he would LOSE IT if I even thought about stepping on the other side of the door before he was asleep.
Well, I fell asleep. When Octavian fell asleep, I have no idea.
By the time I woke up, it was bedtime.
I knew I wanted to get this post out, but I also wanted dessert. And both at the same time never works. Trust me.
So, I chose dessert (priorities).
You guys, the past two weeks have been a blur. As any parent will understand, having a super sick kiddo is ROUGH. And then getting sick yourself? horrible.
But, phew, the worst is over. I CAN SEE THE LIGHT!
To get me through the past several mornings, I have been preparing breakfast the night before.
This is actually my husband’s favorite breakfast food. He asks for it all the time, but I always forget to make it until the next morning. Super healthy and SUPER easy to make, it’s the perfect breakfast to have ready and waiting for the fam when I feel too crappy to even think about breakfast in the morning. It’s also a great grab-n-go breakfast jar (although I do not recommend eating and driving).
And the toppings are limitless! Go crazy!
- 1 cup old fashioned oats
- 1 cup greek yogurt I used vanilla
- 1 cup milk any milk works
- 2 tbsp chia seeds
- 1/2 tsp vanilla extract
- Fruit (go CRAZY!): banana, berries, pomegranate, etc. (fresh or frozen)
- Nuts: slivered almonds, cashews, pistachios
- Seeds: Trader Joe's has an amazing grain and seed blend
- Dried fruit: cranberries, blueberries, raisins
In a large mason jar or container with a secure lid, combine the oats, yogurt, milk, chia seeds and vanilla extract. Mix well. Cover with an airtight lid and store in the refrigerator for at least 4 hours to overnight.
When ready to eat, you can dump toppings directly into the jar or divide into bowls and add toppings.
