Octavian fell asleep on the car ride home at 11am this morning. I guess he was tired. He hasn’t eaten yet today (he’s on a breakfast strike) and still has his shoes on (not gonna risk waking baby bear), but I got him up in his bed successfully, so, phew!

Sacramento has been a million degrees all week and all our buddies have been busy with fun summer family stuff, so it looks like we’ll be spending the rest of the afternoon running errands (not easy with a bum neck and shoulder, but it beats sitting at home with a toddler and no television).

Since it has been SO HOT the past couple months, I have been dishing up a lot of fruit. Octavian pretty much refuses almost every veggie on this planet (unless I sneak it in a smoothie), so I try to make sure he gets lots of fresh fruit every day.

Today, I decided to spice things up a bit with this Avocado, Papaya and Mango Salad with Honey, Lime and Chili Powder. While prepare this salad, my husband was very skeptical of the chili powder (I admit, I was too).

He loved it. Phew!

The sweet fruit, creamy avocado, bite from the fresh lime juice and drizzle of honey turn this from a simple fruit salad into something amazing. It’s delicious eaten in a big bowl by itself, with chicken and rice or wrapped up in a tortilla with shrimp.

Ingredients
 
 

  • 1 large avocado - cubed
  • ½ papaya - seeds removed and cubed
  • 2 cups strawberries - chopped
  • 2 cups mango - chopped
  • 1 lime - zested and juiced
  • 1.5 tablespoon honey
  • Sprinkle of chili powder - optional

Instructions
 

  • In a large bowl combine all ingredients and gently toss together. Sprinkle with a dash of chili powder just before serving (optional) and serve with rice, chicken, tacos, etc.
