Life can get crazy. I’m making things a little easier with 10 EASY Dinner Ideas for Busy (or not-so-busy) Nights.

Come to my house, and you will probably find a refrigerator or pantry overflowing with food. If that isn’t the case, well, something is seriously wrong with me, or we’re preparing for a month-long vacation (both of which haven’t happened in a long time).

That said, just because there’s food, that does not necessarily guarantee that there will be prepared, already cooked, ready-to-eat food. Or just some leftovers from the night before- we really are not picky (except O. He’s definitely picky).

Anywho, this has been especially true the past few weeks.

As a result, I have been digging deep into my archives to prepare some of my favorite easy, go-to dinners.

Just in case you’re not in the mood for a vacation (who are you?), here are a few other easy dinner ideas from yours truly.

Smashed Avocado and Chickpea Sandwich with Peppery Radish Sprouts Prep Time: 5 minutes | Cook Time: 0 minutes Total Time: 5 minutes Yield: Category: Sandwich/Wrap, Vegetarian, Lunch, Healthy Ingredients 1 ripe avocado 1-2 tablespoons plain Greek yogurt 1/2 cup cooked chickpeas 1 carrot, shredded salt + pepper, to taste 1/4 teaspoon chili flakes (optional) Juice from 1/2 lemon Radish sprouts 2 slices of whole grain bread, or bread of choice Instructions In a medium bowl mash avocado with yogurt until it reaches desired consistency (I prefer mine a little chunkier). Add the cooked chickpeas, shredded carrot (I used a cheese grater to shred mine), salt and pepper, chili flakes and lemon juice. Season to taste. Transfer to one slice of whole grain bread and top with desired amount of radish sprouts (or other sprout of choice) and the other slice of bread. Cut in half and serve.
